Country Cornbead with a Black Olive Tapenade topping.

Oh my oh my, well I am finally glad to share with you, one of my favorite bread. This bread is really a staple in my home.

We make it to serve with a hot chili dish, or just to eat as a snack food.


Because we don't eat any animal products in our family, it doesn't mean that we don't eat an array of deliciousness!! I will show you how easy it is to be vegan, and make new very simple dish that will please your family or guests.


As always, not only is it beautiful to look at, but also very tasty!


We eat spicy but if you want to leave out the heat, by all means!! You can find my sour cream recipe here, which is also very easy to make. I always have it on hand because sour cream goes on everything. I use it in a variety of dishes because it is so versatile.

Bake in a preheated 400-degree oven for 20 to 25 min. or until golden



Ingredients Corn-bread

  • 1 med sized peppers chopped

  • 1 green hot pepper of your choice chopped

  • 1 1/4 cup all-purpose organic unbleached flour

  • 1 1/4 cup med. to fine-grain cornmeal

  • 1 1/4 tbsp baking powder

  • 2 tbsp ground flax

  • 1/3 cup cold-pressed olive oil

  • 1/4 cup dark maple syrup

  • 1 1/4 cup non-dairy milk ( I used almond milk )

  • drizzle liquid smoke (mesquite)

  • salt and pepper, to taste

  • 1 tbsp chopped fresh cilantro

Ingredients Tapenade

  • 1 can pitted black olives

  • pinch of smoked salt

  • 3 tbsp. olive oil ( cold-pressed )

  • zest of 1 small mandarin

  • 1 tbsp mandarin juice

Directions:

  1. Wash and chop your hot pepper and orange peppers ( put them aside for later )

  2. In a bowl add your unbleached flour, cornmeal, baking powder, ground flax, salt and pepper to taste, chopped cilantro, and your chopped peppers. Mix everything well before adding your wet ingredients.

  3. You can now add your milk, maple syrup, olive oil, and liquid smoke. Mix everything well, and pour the mixture into a cast iron pan.

  4. Bake in a preheated 400-degree oven for 20 to 25 min. Or until golden

Meanwhile, while the bread is cooking let's make some black olive tapenade.

  1. in a mortar or food processor, add your black olives and olive oil and chop up your black olives.

  2. after they are chopped add the grated zest of a mandarin, and add a little of the mandarin juice.

  3. And finally, add a pinch ( small pinch ) of smoked salt to your tapenade. Put aside to serve on top of your cornbread

  4. enjoy!


Serve with some sour cream
