Yummy and Chewy - The World's Best Vegan Coconut Oatmeal Cookies Ever!

I know, we all watch what we eat and always strive for the healthiest meals. But what is life without a little sinful dessert?! You don't have to eat them often, but once in a while why not be bad? So bad, yet so good. These ooey-oogey chewy cookies are what you need to hit the spot! Am I tempting you yet? >:)




Now, I can keep on describing how good these cookies really are, but you will never know what heaven tastes like until you take a bite out of one of these yourself!

Well here you go. . . I have finally decided to share this recipe with all of you!

Preheat oven to 350F convection air = 375F conventional oven and cook for 17 min.

Do keep an eye out for every oven is different.


Ingredients:

  • 2 cups oatmeal

  • 1 1/2 cups flour ( plus 2 tbsp )

  • 1 1/2 cups V-sugar*

  • 1/2 cup coconut flakes

  • 3/4 cup cranberries

  • 1 cup large dark thompson seedless raisins

  • 1 1/2 tsp salt

  • 1 heaping tsp baking powder

  • 2 tsp vanilla

  • 1 cup V-butter* or V-becel*

  • 1/2 cup of almond milk ( or less )

*V-sugar = vegan white sugar

*V-butter / V-becel = vegan butter


Directions:

  1. In a stand mixer add all ingredients with the exception of the butter and milk.

  2. Mix for a few minutes until nice and incorperated.

  3. Add the butter and mix well on a low setting

  4. Finally add the milk slowly ( you many not need the full amount ) on a low setting and then bring it up to a #3 setting, and mix everything well, until it all comes together. The dough should not be liquidy, but wet and slightly firm, not dry.

  5. Now how easy was that :)


Note: THESE WILL NOW GO INTO A PREHEATED 350F OVEN FOR ABOUT 17 TO 20 MIN. OR UNTIL THE COOKIE IS A NICE LIGHT GOLDEN COLOUR.


LET THEM COOL OFF FOR ABOUT 5-10 MINUTES ON YOUR COOKIE

TRAY BEFORE PUTTING THEM ONTO A WIRE RACK TO COOL OFF
